Nonna’s Italian Meatballs

Everyone needs a tried-and-true comfort food recipe in their repertoire to pull out from time to time; these spicy herb- and garlic-laden meatballs are definitely one of mine. Garlic, oregano, and cayenne, all pungent herbs, make wonderful additions to cold-weather meals because they stimulate circulation, warm us up from the inside, enhance digestion of meats, and improve our resistance to infections.

MAKES 12 TO 16 MEATBALLS | PREP TIME: 20 MINUTES | COOK TIME: 1 HOUR 30 MINUTES

6 slices Italian bread, crusts removed and cubed

1 cup milk

1½ pounds ground beef or turkey

3 eggs, beaten

1 teaspoon salt

1 teaspoon freshly ground black pepper

½ cup chopped fresh parsley

1 to 2 tablespoons minced garlic

1 teaspoon dried oregano

½ teaspoon red pepper flakes

⅓ cup grated Pecorino Romano cheese

¼ cup plain dried bread crumbs

12 cups homemade or jarred marinara sauce
